Like a hotel within a hotel, the top three floors of Holiday Inn Darling Harbour are dedicated to our business guests. Sixty rooms and suites reopened in November 1999 after being refurbished to meet the needs of today's business traveller.

  • Shipley's: A sense of Sydney's rich past is never far away at the Holiday Inn Darling Harbour, especially when you're dining in Shipley's. Shipley's is named after John Shipley, who owned the coffee and spice mill located on the site last century. Chef Matthew Eastwell and his team serve fresh and imaginative cuisine in the beautifully converted building with its imposing cast iron columns and an authentic ironbark ceiling.   • JB's Bar & Grill: JB's Bar & Grill was originally a woolstore built more than a century ago by a local merchant, John Bridge. JB's has local and imported beers on tap and features wines from the famous Hunter Valley region, just north of Sydney. JB's Bar & Grill is also famous for its sizzling Stonegrill steaks and cooling ales. Open daily from 11am until late
  • Gaming Room: Poker machines can be played in the Gaming Room, located at the rear of JB's Bar & Grill. Players must be over 18 years of age.
  • Room Service: Operates 24 hours a day, seven days a week offering all day dining and sleepwalker menus.
