| Travellers will savour
island cuisine that has taken a lifetime to perfect. Whether it's his
recipe for Macadamia Nut Mahi-Mahi, BBQ Baby Back Ribs, Seared Chilean
Baby Lobster, with Ocean Salad or Hawaiian Pulehu Tri-Tip Steak, Sam uses
only the freshest ingredients to flavour his world-famous dishes.
United launched Sam Choy meals on its flights
between the U.S. and Hawaii in early 1998 as part of the carrier's
successful "Celebrity Chefs" program. Chef Choy is known for
creating meals that use fresh Hawaiian ingredients such as fresh fish,
fruits and vegetables. His style incorporates the bounty of the islands
with nouvelle cuisine. Choy operates eight restaurants in Hawaii, has his
own televised cooking program and authored the best-selling books "Sam
Choy's Cuisine Hawaii," "The Choy of Seafood" and "The
Choy of Cooking."
With service to 27 countries and one territory on
five continents, United provides one of the most extensive inflight
catering services in the World. Every day, United serves more than 200,000
meals to customers on more than 2,400 flights across the globe. In
addition to its regular catering service, United works in partnership with
the Culinary Institute of America and a group of celebrity chefs which
includes Sheila Lukins, Martin Yan, Sam Choy, Mary Sue Milliken and Susan
Feniger, Norman Van Aken, Charlie Trotter and Jacques Pépin. Onboard,
United services the finest in name-brand products such as Starbucks coffee,
and Starbucks Frappuccino, Dom Perignon champagne, Godiva chocolates, Ben
& Jerry's ice cream, Mrs. Field's cookies and Eli's Cheesecake.

Everything from "soup to nuts" goes
into over 200,000 meals and snacks that are prepared daily for our
passengers. We also serve a wide assortment of beverages.
In the early 1930s, coffee and cold chicken,
served by the copilot no less, were the primary fare aloft. But as newer
and faster planes came into service and more people took to the air, there
was a need and desire for better food service.
So in 1936, United opened the world's first
airline flight kitchen in Oakland.
Today, at 109 locations in the U.S. and 42
locations around the world, we have caterers prepare all our in-flight
food to United's exacting specifications.
We offer a number of meals to meet special
medical, religious or other dietary specifications (we serve about 3
million each year).
United Airlines Special Meals

Special Meals are an important part of United
Airlines On-Board Service. Our customers may request a wide variety of
Special Meals for medical, diet or religious reasons, or just as a
refreshing change of pace.
It is the goal of the employee owners of United Airlines to provide our
valued customers with Special Meals of the highest quality and consistency.
We cannot accomplish this objective without the same commitment from our
reservation agents, travel agencies, customer service representatives,
caterers, and flight attendants. With this in mind, United's Onboard
Service division created a cross-functional Task Team with the primary
objective being to enhance the Special Meal delivery process from the
point of sale right through hand delivery of the meal to our passenger.
Automation enhancements, training tools, and even a bold change in advance
ordering time (at least 24 hours in advance of flight departure) are just
a few of the concepts that the task team has implemented to make the
Special Meal Program more reliable for our customers.
Medical guidelines for Special Meals are based on the latest information
and guidelines from the American Dietetic Association, American Heart
Association, American Diabetes Association, and the American Cancer
Society.
United Airlines has joined efforts with Heart Smart Restaurants
International to provide nutritional analysis for all Special Meals. If
all meals within a special meal category meet the Heart Smart guidelines
of 30% or less calories from total fat, 10% or less calories from
saturated fat, 150 mg. or less cholesterol, and 1100 mg. or less sodium,
the category will be shown with the Heart Smart Seal.
For North American originating flights, the nutritional data will be
provided to our passengers on an informational card placed on the meal

The complex logistics of airline catering makes it impossible to tailor a
meal plan to each passenger's individual needs or preferences; therefore,
it is recommended that individuals with sensitive allergies or severe
medical conditions consult a nutritionist/dietitian who is an R.D. (Registered
Dietitian) and member of the American Dietetic Association for assistance
with menu selections.
*The Special Meal menu may vary slightly in some
international locations due to product availability; however, the dietary
guidelines listed for each category will be adhered to. |
